Merlot

                       Merlot, one of the best known grape varietals in the world, has received a great deal of attention recently.  Although labeled the new standard red, it is the most extensively planted grape in all of the Bordeaux region and accounts for over 50,000 acres in California.  Merlot grapes are dark and thin-skinned and grow best in cool climates and dry, rocky soil, particularly clay.  Berries are large, hang in loose bunches and usually ripen early.  Naturally low in acidity and malic acid, Merlot tends to have a lush smoothness and be less severe than other varietals.  Typically, Merlot displays aromas and flavors of plum black cherry, currant, leather, oak and bell pepper.  Herbs can penetrate the aroma and taste of merlot when either under or overripe grapes are harvested.  High sugar levels and few tannins contribute to Merlot’s softness.  This varietal is quite versatile with food and can only benefit from aging.
